The story of the Laguiole knife begins in the early 19th century, in a small village of the same name in France, in Aveyron, in the heart of the Massif Central. This folding knife was originally used by farmers and shepherds.
Inspired by local knives such as the ‘capuchadou’, a straight knife used by farmers in the region, and the Spanish ‘navaja’ folding knife, the Laguiole quickly became known for its elegant style and practicality.
From the middle of the 19th century, faced with growing demand and the need to offer new products, the cutlers of Laguiole collaborated with the cutlers of Thiers, renowned for centuries for their expertise in cutlery.
From then on, the Thiers area began to play a major role in the production of the Laguiole knife, in symbiosis with the village of Laguiole: new materials, new supplies, new finishes…

And so it remained until the Second World War, which wiped out cutlery production in Laguiole and reduced it to nothing for several decades.
Fortunately, the Laguiole knife survived thanks to the Thiers-based company, which continued to develop it and enjoyed its own success in the 1970s, when it was seen as the emblematic knife for a return to authenticity, nature and the land.

The ensuing international renown led to the return of Laguiole knife-making to Laguiole village in the 1980s, with new cutlers setting up shop in the knife’s birthplace.
Since then, craftsmen from the two towns, Laguiole and Thiers, have worked hand in hand to ensure that each handcrafted Laguiole knife is an exceptional piece of work.
