For almost two centuries, the “Laguiole” knife has fascinated people with its history, legends and beauty.
Goyon-Chazeau, a master cutler and expert in stainless steel welding and forging, is one guardian of this heritage. The company, a member of the Association Couteau Laguiole Aubrac-Auvergne (CLAA), contributes to preserving the authenticity of this top-of-the-range model through the very strict manufacturing standards implemented in its workshop for several decades.

Some of these are the result of Goyon-Chazeau’s capacity for innovation: the workshop was responsible for the first all-stainless steel Laguiole knife (1992) and a range of entirely forged Laguiole table knives (1994).
The Laguiole sets designed and marketed by Goyon-Chazeau include 1, 2, 6, 12 or 24 pieces. Knives, forks, teaspoons, soup spoons, serving pieces such as cheese knives, bread knives, salad servers (2 pieces), carving sets (2 pieces) and many more, combine to offer you a variety of sets and cutlery.
Each Laguiole set belongs to one of the collections defined by Goyon Chazeau by its design, type of material and level of finish: “Brasserie”, “Avantage”, “Prestige” or “Luxe”.
Some sets are packaged in an elegant cardboard box (Brasserie). Others are presented in beechwood (Avantage) or oak (Prestige and Luxe) boxes adapted to each Laguiole cutlery set.
The “Brasserie” range is ideal for everyday use, particularly in restaurants. It offers sets of six table knives that keep the traditional lines of the Laguiole model in a “full silk”, “full handle” version.

Like Goyon-Chazeau’s other Laguiole ranges, the cutlery in the “Avantage” line feature the characteristic Laguiole design, with its slender silhouette, curved tip and two bolsters at either end of the handle, in wood, or more modern acrylic, or a resolutely ecological approach with Paperstone, a composite material made from recycled paper and cardboard.
No chiselling appear on the backs of knives, forks or spoons, to emphasize the purity of the lines and the beauty of the material used for the handle.
Handles can be made of the noble wood traditionally used in Laguiole, Paperstone or acrylic.
Among the woods most frequently used by Goyon-Chazeau are boxwood, snakewood, olive, juniper, rosewood and kingwood.
The components of these “Avantage” sets and cutlery pieces are forged from the finest steels: X46CR13 (1.4034) stainless steel for a table knife, X2CrNi19-11 (1.4306) stainless steel or 18-10 steel for the cutlery tops.
The cutlery in the “Prestige” collection is the most elaborate in the Goyon-Chazeau catalog.
Each knife, fork and spoon presented in this Laguiole range is made from noble materials such as rare and precious woods, marblewood, boxwood, juniper, birch, snakewood, ebony… or horn, bone or deer horn.
The “Prestige” line of cutlery will appeal to those who love beautiful tables studded with cutlery that is both functional and decorative, worthy of collector’s items.
The forged cutlery in the “Prestige” line reveals the meticulous craftsmanship and intricate details characteristic of top-of-the-range Laguiole models.
With a briliant finish, the backs of the pieces are chiselled, the handle features the famous “shepherd’s cross” and the bee is represented at the base of the stainless steel blade, in a stylized form.

Goyon Chazeau is always on the lookout for innovations to enhance the Laguiole model without ever betraying its fundamentals, and uses other materials for the handles of its knives, forks, spoons and service pieces.
Some are rare and prestigious, such as mammoth materials (mammoth pulp, mammoth molars, etc.), warthog ivory, horn, bone, etc. Our workshops also work with blond or black horn, ram’s horn, buffalo crust, warthog ivory, white bovine bone or camelid bone…
Deer horn is one of Goyon-Chazeau’s astonishing resource: here, it’s not a question of horns, but of bony organs taken from the tusks that develop on the heads of cervids.
The animal loses these very hard appendages every year during a moult that generally takes place at the end of summer. Deer horn has a naturally rough texture, with variations in grain and a range of colors from white and pale beige to dark brown. These characteristics, specific to each piece, give your “Laguiole” a very personal and unique value.
Goyon-Chazeau also uses mammoth pulp and molars for the handles of Laguiole Luxury knives, forks and spoons: in both cases, the materials are fossilized and preserved in the frozen soils of cold regions, notably Siberia, where these elephantidae, which became extinct over 10,000 years ago, lived.
The pulp comes from the base of their tusks (the inner part just above the jaw).
The molar is, of course, a tooth.
These materials are recovered almost intact from the permafrost, cleaned, sometimes tinted, stabilized with a resin to reinforce its structure and then cut. The resulting chips are then mounted on Laguiole knives or cutlery. This highly skilled craftsmanship is completed by shaping and polishing.
The use of rare, precious and original materials gives your Laguiole box or cutlery set a refined style and a remarkable cachet: in this timeless, luxurious register, Goyon-Chazeau demonstrates great creative ability.
Expert in stainless steel welding and forging, Goyon-Chazeau is also one of the last cutlery makers in France to practice hollow handle assembly. In this manufacturing method, the knife handle is made from 2 metal shells welded together to create the hollow handle, itself welded to a forged blade.
The design of a Goyon-Chazeau Laguiole knife, fork or spoon, whatever the line, respects strict criteria of quality and authenticity. The use of first-rate materials (noble wood, horn, bone, stainless steel, etc.) is at the heart of Goyon-Chazeau’s production process.
In most lines proposed by Goyon-Chazeau, each blade is forged from high-quality X50Cr MoV15 stainless steel, known for its hardness, corrosion resistance and ability to maintain a sharp edge. Each knife blade is then shaped, polished and meticulously sharpened through dozens of manufacturing stages.
