Bread knives has a special place in kitchen cutlery.
Firstly, because it is one of the rare knives to have a serrated blade (tomato and steak knives also have one).
Secondly, because it is mainly used for cutting already-cooked food, and less for preparing food. It’s the “paring knife of the bakery-pastry shop”!

It has to make beautiful slices of baguette with a crisp crust, to separate a sponge cake in two so that it can be filled, to cut the crumb of a brioche without reducing it to mush…

What is a bread knife used for ?

As its name suggests, it is of course used for cutting bread.
Its serrated blade makes it easy to slice through the crusts, from the thinnest to the thickest, from the softest to the hardest, without crushing the crumb and keeping crumbs to a minimum.

It is also very effective for slicing pastries, brioche or sponge cake without crumbling them, or for cutting pizzas and bruschettas, which often give other types of knife a hard time.

It can also be used to cut cucurbits (squash, melons, watermelons, etc.) or other fruits and vegetables with thick, hard skins, such as pineapples, thanks to the thickness of its blade combined with its sharp serration.

How to recognise a bread knife?

A bread knife has a long, serrated blade with high and wide teeth  with rounded notches.

It is available in kitchen cutlery and table cutlery.

In kitchen cutlery, the bread knife is large, with a blade of over 20cm.
It slices all types of bread efficiently, from baguettes and farmhouse bread to cakes and pastries and fruits and vegetables listed above.

The table cutlery bread knife is lighter.
It also has a blade of around twenty centimetres but less wide and with a smaller handle. It cuts baguettes and long loaves efficiently and elegantly, but is less effective for other tasks.

How to choose your bread knife ?

To choose the right bread knife, don’t rely solely on style and price.

If you’re looking for efficiency, check the usual cutlery criteria too:

  • Steel quality :stainless steel is the best choice
  • Thickness: the quality of the cut will depend on it. A blade that is too thin will tend to twist when cutting hard and thick surfaces.
  • Grinding quality (Principle which consists of removing metal in order to produce the cutting edge). The wider the grind (prefer a full grind) the better your knife will cut.
  • Serration: To be effective, each teeth must be well marked and not too close together (every 5mm is good).
  • Ergonomics : You need to have a good grip on the knife to be sure of working effectively with it.
